Palmiers, Any one?


Practically, every Saturday I make a little something sweet for the husband. The husband has a sweet tooth, I do too but I try and stay away from too much sugar these days.

Melly, you may like this too, it’s a French pastry called ‘Palmiers’ and its ohhh so easy to make. There’s a little chain of cafés here called ‘Paul’s’ and they have the best ones in Dubai. So the other day when Martha Stewart was making them on TV, I jotted down the recipe and then googled it.

Palmiers are made from buttery, rich puff pastry, they call it puff pastry because when heated in the oven, it’s supposed to ‘puff’ up. My palmiers did not ‘puff’ up!!!

Then I figured out why. I used a local brand. It was made with refined palm oil and not butter, so if any of you out here in Dubai are reading this, and want to use puff pastry - read the ingredients! Don’t choose the one with ‘refined palm oil’ - don’t try it, while the palmiers came out looking okay, I think it failed at the buttery taste. Thankfully, the sugar camouflaged the missing butter-ness.
