white chocolate cupcake with raspberry
This recipe is modified from the original found in "Piece of cake" by David Muniz and David Lesniak. It has a lot more eggs than what you usually find in a recipe and I was curious to see what kind of a cupcake it would turn into. And I wanted to try and use the white chocolate that was lying around.
ingredients:
1 cup butter
1 1/2 cup white chocolate chips
1 cup white sugar
6 eggs
1 tsp vanilla
1/4 tsp raspberry extract
1 cup flour
1 tsp baking powder
in a medium sauce pan, melt the butter and white chocolate together. Stirring often until both are almost melted. Stir in the sugar and then add the eggs, vanilla and raspberry extract. Lastly add the flour and the baking powder. Using an ice cream scoop portion out the batter into already lined cupcake pans. Bake at 350 for about 13-18 mins.
when cooled top it with sweetened whipped cream and a raspberry.
