Pumpkin Cake
I love fall, at least in Minnesota where the leaves would turn into all different hues of yellow, orange and red. Another clue that fall is here is the invasion of pumpkins. Pumpkins displayed in every store, pumpkin as in as I
in everything. I love it, I embrace the pumpkin craze. This year I started with this simple yet luscious pumpkin cake.
Ingredients:
1 cup oil
1 1/2 cup sugar
4 eggs
1 teaspoon vanilla
2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp clove
1 can pumpkin puree
2 tsp baking powder
2 cups flour
Beat the oil with the sugar for a couple of minutes then add the eggs one by one. Add the pumpkin puree, vanilla, clove, cinnamon and nutmeg. Finally add the flour and baking powder.
pour the batter into a 9x13 pan or 2 8 inch square pans. Bake in a preheated oven at 350 degrees for 20-25 mins
enjoy as is or with some cream cheese frosting.
