Easter ginger cake
Easter is a very important celebration, it is more important to Catholics than Christmas because He died for our sins. So every year for Christmas I make the usual fruit cake and for Easter I make an extra special fruit cake with ginger in it. Its a dense cake packed with flavor with nuts and berries with the added zing from the ginger. I have to admit I was very hesitant in making it the first time because it just didn't sound appealing but boy was I rewarded for trying it. If you like ginger, you will love this cake, its my mother-in-law's fav.
Ingredients:
1 stick butter
3/4 cup packed dark brown sugar
3 eggs, room temperature
1/3 cup milk
2 tsp vanilla
1 cup crystallized ginger, shopped
1 cup dates, chopped
1 cup pecans, chopped
1/2 cup pistachios, chopped
1/2 raisins, chopped
1 1/2 cup flour
1 tsp baking powder
1/3 cup milk
In a bowl add the flour, baking powder, ginger, dates, raisins and the nuts. Toss it all around so the mixture is evenly coated Beat the butter with sugar till light and fluffy. Add the eggs in one by one and the vanilla. Add the flour mixture in three batches alternating with the milk.
Preheat the oven to 350 degrees, scoop the batter into a 8 inch pan and bake for about 50 mins
