Malasadas
Hurricane Patricia is on it's way towards Mexico bringing in tonnes of rain across the States, so we stayed indoors and the kids had a hankering for donuts. It reminded me that I was meaning to try out Malasadas, Portugese donuts, Which I found accidentally when looking for a recipe for masala dosas. Next thing I know I am knee deep researching donuts, there are many out there.
Here is an adapted version of a recipe I found in Saveur magazine
1 tablespoon instant yeast
2 teaspoons sugar
2 tablespoon lukewarm water
3 eggs
3/4 cup milk
1/4 whipping cream. ( the original recipe calls for 1/2 milk, 1/2 half &half) but this is what I had
1/4 tsp salt
1/2 cup sugar
4 cups flour
Add the lukewarm water, yeast and sugar in a bowl for about 10 mins. Whisk the eggs and add the milk, whipping cream and sugar. Finally add salt and flour till you have cohesive dough. Put the dough in a warm area covered with cling wrap for about an hour till it doubles in size. After an hour, roll the dough into a rectangle and cut out about 15-16 circles. At this point I realized I probably didn't have enough of oil to deep fry big malasadas so I cut each one four and made mini malasadas to fry.
Heat the oil on medium heat and gently fry for 4-5 mins till you get a nice golden color. Sprinkle with powdered sugar when you pull them out of the oil and enjoy.
