Malaysian Roti Channai / Indian Parathas

The other day I was watching ‘Po’s Kitchen’ and she was in the middle of making Malaysian Parathas or as they would call it, “Roti Channai”, we Indians would call it "Parathas". Suffice it to say – my tummy rumbled and mouth started salivating.

Her roti's took me back to Dubai when I was a little girl; my favourite dish was parathas and beef fry from a tiny Malyalee tea shop a street from where I lived in Al Qusais. This place had amazingly cheap Indian food; you could get two parathas and beautiful beef fry for only AED 5.00 approximately AUD 1.25 and that would be my dinner.  

During the winter months I would huddle next to the entrance of the tea shop to keep warm, watching in awe as the paratha maker would spin the parathas in the air and then whack them on his oily table finally throwing them on the huge frying pan (it would have been the size of a small dining table). He would flip them with his bare hands and once they were ready squish them together ensuring they were airy and flaky. Then package them in brown lunch bags and had them out to the either crowd.

I do however remember the parathas to be glistening with butter and oil and with wheat flour *sigh* laden with carbs. I was surprised with Po’s ingredients, which include condensed milk (Full of SUGAR!) and an added tea spoon of sugar as well. I substituted the condensed milk for evapourated milk and used a teaspoon of stevia instead of the sugar.


And they turned out really good and tasted exactly like the ones I used to have in Dubai. While I do maintain a low carb diet this is a super good cheat!
