Marzipan cake
So Christmas is over and we still have some stray cookies that we forgot to eat along with a box half full with marzipan fruits. In an attempt to repurpose them so they would be eaten, I searched for a cake recipe using Marzipan and then I basically recycled the Christmas treats.
Ingredients:
7oz, 200 grams of marzipan
1 cup sugar
1 stick butter, room temperature
5 eggs, room temperature
1 tsp baking powder
1/4 tsp almond extract
3/4 cup flour
Preheat the oven to 350 degrees F. Butter generously and then flour a 9 inch loaf pan. Tap out the excess flour or alternatively spray the loaf pan with a baking spray. In a bowl beat the butter and marzipan till the marzipan blends into the butter. Add the sugar and beat till it looks creamy (about 4 mins). Add the eggs, one at a time followed by the almond extract. Lastly fold in the flour gently along with the baking powder. Pour batter into the loaf pan and bake for about 65-70 mins. To check if its done, insert a toothpick which should come out clean if the cake is done.
Serves 10-12 people as it is a rich cake.
What I learnt from this: That you can recycle just about anything!
Also, the shape of the loaf an extends the baking time of the cake, which leads to a dark brown, almost burnt crust. If you would like to avoid it, use a 8 inch round pan and reduce the cooking time to about 30-40 mins.
