Dutch baby pancakes
I cannot say Dutch baby with trying to pull of my worst impersonation of Austin Powers. I know.......weird but once you hear someone say a phrase or word in a particular way you end up associating it to them always.
I wanted to try something different, I make pancakes all the time, just wanted to see if these would turn out nice and if the kids would gobble it up.
I forgot to add the sugar and only realized it later when I stuck it in the oven. I was sure it was doomed as I felt sugar was an important component to make it puff up. Clearly I was wrong because sure enough after about 12 mins into the bake time it started to puff up on the sides. It was very exciting to see. I used the recipe from the martha stewart website which called for three eggs which made it a little too eggy for my taste. I will try these again, maybe with two eggs next time and the sugar.
Ingredients:
3/4 whole milk cold
3 eggs
1/2 cup flour
1/2 tsp vanilla
1/4 cup sugar
A pinch of salt
Beat the eggs in a bowl and add the flour to it. Add the milk in gradually and vanilla, sugar and salt.
Preheat the oven to 425, add a tablespoon or so of cubed butter and stick your 8" cast iron pan in the oven to melt the butter. Once melted take it out, pour the batter all at once and stick it back in the oven for about 20 mins till it is all puffed up and a nice golden brown.
Serve immediately as it deflates quickly and loses it's charm.
Serve with your favorite jam, flavored butter or honey.
