Fish and chips
Not really a Lental staple but my son asked for fish and chips and I thought why not try on a Friday. Now this is not exactly the ideal menu in terms of nutrition or if you are counting calories. But I just wanted to try and make it.
Ingredients:
4-5 fillets of nice white fish (I used Flounder)
1/2 cup flour
1/2 cup corn flour
1/2 tsp baking powder
Salt and pepper to taste
1/4 cup beer.
Mix the two flours together and with a whisk pour the beer. You want a thick batter so the fish will adhere to it. Add the salt and pepper and keep aside. (Add the baking powder right before dipping the fish in the batter.
Make sure the fish is clean and dry. Sprinkle salt on each piece and dredge the fish in some flour. Do this right before dipping in the batter or else it will absorb moisture from the fish and get gloppy.
Preheat some oil in a pan and when hot, dredge the fish in flour and dip in the batter and deep fry.
It should take about 4 mins and try not to overcrowd the pan.
Enjoy with some fries, tartar sauce and a squeeze of lime.
I did make some fries, but they were not as crispy I had hoped. An experiment for another day.
