Eggless vanilla cake
I love eggs, so I don't necessarily seek recipes that eliminate them. But I have a bunch of friends who don't eat egg and I was intrigued as it would naturally have fewer calories.

1/2 cup butter
1 tin sweetened condensed milk (400gms)
2 tsp vanilla
1 1/2 cup AP flour
2 tsp baking powder
1 tsp baking soda
4 tbsp. yogurt
2/3 cup Pepsi
Preheat the oven to 325 degrees. Beat the butter with the condensed milk in the bowl of your stand mixer on high for 5 mins, till it is light and creamy, add the vanilla and yogurt. Gently mix the dry ingredients (flour, baking soda and powder) in two additions alternating with the Pepsi.
Pour the batter in a 10 inch cake pan, and bake for 30-40 mins. A toothpick inserted should come out clean. cool, cut and enjoy.
