Date and nut roll cake

Some women are dripping with diamonds, some women are dripping with pearls, but lucky me, lucky me..... I'm dripping with baking stuff. Yes that is part of a song from Annie. It is true, I couldn't care less about jewelry, but show me a new pan and I go crazy.
It all started when my sister insisted that I watch Miss Fisher's Murder Mysteries. In one episode, Dot uses cylindrical pans to bake cakes for the Chruch fair and that's when I knew I had to have that pan. I called the same mentioned sister, who happens to live in Australia, played the "you know what I really want for my birthday" card  and low and behold, I got my pan... two of them :)

Then I searched online and voila found a recipe to try out. I have to admit I was very skeptical of this recipe, but boy was I right to try it out. It is addictively good, if you like dates. Here is a recipe adapted from asplashofvanilla.com

Ingredients:

1 cup boiling water
1 cup chopped dates
1/2 tsp baking soda
6 tablespoons butter
1 tsp vanilla
1 cup dark brown sugar
2 cups AP flour
1/2 tsp baking powder
1 egg
1/2 cup pecans and walnuts

Preheat the oven to 325 degrees. Grease two roll tins generously with butter. In a medium sized pan, add the chopped up dates, the boiling water and butter. Add the baking soda and let it sit for 2-3 mins. Add the sugar to the warm mixture and mix well. When the mixture is slightly cool, whidk in the egg and vanilla. Gently fold in the flour and baking powder, followed lastly by the nuts. On a baking sheet with a lip (to catch any mishaps) place the pans upright and fill till half full only. Tightly close each pan and place in the oven. Bake for 45-50 mins. Let the cakes cool completely and then gently puch them out of the tins. Enjoy with some butter or eat it plain, it tastes amazing.
